This Indian Monsoon Malabar selection is a distinctive specialty Arabica coffee sourced from the mountainous regions of southern Mysore, India. What sets this coffee apart is the traditional monsooning process, a historic postharvest method unique to Indian coffee.
In the monsooning process, green coffee beans are exposed to monsoon winds from the Arabian Sea for several weeks. This controlled exposure causes the beans to increase in size, turn a pale yellow hue, and lose much of their natural acidity. The result is a coffee renowned for its smooth, mellow profile, heavy body, and unmistakable earthy character.
Roasting Suggestions
This coffee is well-suited for home roasters seeking a low-acid cup with substantial body. It performs best at light to medium roast levels, where its unique attributes shine.
Expect flavor notes of baker’s chocolate, earthy spices, and a creamy, syrupy mouthfeel. Because the beans have already been “weathered” by the monsooning process, they roast differently than standard washed coffees—producing high body, very low acidity, and a gentle sweetness rather than bright fruit tones.
Origin
Grown in the southern regions of Mysore and Coorg, this coffee benefits from rich biodiversity and elevations ranging from 4,000 to 5,000 feet above sea level. While Indian Arabicas are generally known for their full body, the monsooning process dramatically alters the bean’s structure.
This transformation echoes the era of colonial sea voyages, when coffee shipped to Europe absorbed monsoon humidity en route. Today, that historical accident is intentionally reproduced to create a cup with exceptional body, reduced acidity, and a flavor profile found nowhere else in the world.
Varietals
Producers in this region cultivate traditional Indian Arabica varietals, including Kent and Cauvery. The coffee is grown on a mix of estates and small farms.
Production Process
Harvested between November and February, this coffee bypasses traditional wet washing in favor of the classic monsooning method. After sundrying on open patios, the beans are stored in open-sided warehouses throughout the monsoon season.

Do not grind, brew, or consume unroasted coffee. Green coffee beans that have been purchased and used/roasted are not returnable. Due to agricultural regulations, we are unable to ship green coffee beans to Hawaii or Puerto Rico.
