Cassia Cinnamon has been a popular and prized spice for thousands of years. Cinnamon trees are native to Sri Lanka and India and thrive in rainforest-like environments. The rough inner bark of the trees is stripped and dried to produce cinnamon as we know it, in strips, chips or powder. Cassia cinnamon plants can be used to make cassia oil, which is used heavily in flavoring sodas, baked goods and liqueurs.
Cinnamomum burmanii is sweet and mellow in flavor and is excellent for baking. We suggest steeping the fragrant chips into cinnamon bark tea, blending them with fresh coffee ground or flavoring your favorite confections.
